Serendipity Catering served as presenting catering partner for what organizers called America’s longest table, held August 1 at Denver’s National Western Center

To celebrate Colorado’s 150th anniversary, the Serendipity Catering team prepared and served dinner for 2,800 guests at the Mile Long Table, held at Denver’s National Western Center. The event marks a new benchmark for the company, which has spent years building a reputation for chef-crafted, sustainably sourced catering across weddings, corporate events, and community gatherings throughout the Denver metro area.

For the event, Serendipity’s team prepared a western-inspired dinner menu, including pulled barbecue chicken, barbecue jackfruit, chuckwagon potato salad, Olathe sweet corn succotash, classic cornbread, and celebratory birthday cake, with gluten-free options across most of the menu. The meal was served buffet-style, allowing guests to select their own portions and dishes rather than receive a fixed plate. The event also featured an open-fire activation station where Serendipity roasted sausage from Polidori Sausage, a Denver-based company marking its own 100th anniversary this year. Executing a single, cohesive meal at this scale required a level of staffing, logistics, and food safety coordination well beyond the company’s typical events, and stands as a proof point for the kind of large-scale execution Serendipity Catering is now equipped to handle.
The achievement builds directly on the sustainability practices that have defined Serendipity since it became Colorado’s first certified green caterer: locally sourced ingredients, reduced-waste service, and full-service execution from planning through breakdown. For this event, the company sourced key ingredients from Colorado growers and producers, with assistance from Shamrock Foods. Serendipity Catering applied the same farm-to-table standards that guide their customizable menus, even as the event’s size multiplied its typical sourcing needs many times over. Leftover food from the event was donated to We Don’t Waste, the Denver-based food rescue organization that served as the Mile Long Table’s official food recovery partner.
“Preparing the food for 5,280 is insane, but we are gonna do it anyway. And the only way Serendipity can do it is because we have a great team…I couldn’t be more proud,” said Zaspel.
Serendipity’s team served the full guest list in the evening under hot but beautiful clear skies, completing dinner service for the entire length of the table without incident.
